Review on 64 Degrees
64 Degrees is the new social dining hotspot making waves in Brighton's iconic and historic Lanes, a short walk from the seafront. The restaurant is an intimate affair holding just 27 covers, it has an artfully simple décor and a buzzy atmosphere. The focus of the dining room is the modern open kitchen, where the counter bar stools set around it are the best seats in the house, as diners can interact with the chefs and watch all the action.
Chef/patron is Michael Bremner, who has worked in a number of prominent Brighton restaurants over the years, including the award winning Due South and more recently Brighton's restaurant of the year for 2012, Food for Friends. He has created an inventive modern-tapas style menu using molecular cooking techniques, carefully harmonised to surprise and seduce the most sophisticated palette. Seasonality is paramount to Bremner and he is committed to sound ethics when it comes to sourcing ingredients, making excellent use of local trusted suppliers.
The concise menu features, four meat, four fish and four vegetable dishes and it is recommended that you choose between three and four dishes per person. A good starting point might be the highly recommended haddock, house egg, cullen skink and spinach, which is where the restaurant gets its name, as the egg is cooked for 40 minutes at 64c in a controlled environment. Other options worth considering are kimchi chicken wings and blue cheese or another popular choice is the cauliflower, shallot bhaji with pomegranate. For those with a sweet-tooth there's hazelnut microcake with hot chocolate and malt ice cream or a sticky toffee pudding.
