Review on Moshimo
Moshimo a sushi restaurant specialising in top-drawer food based around an ever-revolving ‘kaiten’ (conveyor belt) is tucked away in a bespoke building between Brighton’s Lanes and the sea. It’s also environmentally in-tune: only sustainable species of fish are served, bluefin tuna is banned from the menu because of its scarcity, and there’s an increasing emphasis on health and nutrition.
The procedure is simple: sit at a stool, watch the procession of colour-coded plates and take your pick from the fascinating assortment of remarkably cheap delights. Alternatively go for one of the special ‘sets’ served on wooden platters (geta)’: the ‘stamina’ version includes two pieces each of salmon, tuna, prawn and taman, plus three salmon rolls and three kappanmaki.
Added to this are appetisers like gyoza dumplings and soft shell crab tempura, plus seasonal specialities such as Loch Duart salmon teriyaki, belly pork with sweet potato, okra and aubergine, and steamed Cornish ‘catch of the day’ on vinegared rice with peppery mustard sauce. Drink Japanese beer, saké, juice, tea or something from the minimal wine list.
