Review on Cambium, Carey's Manor Hotel
The four star Carey’s Manor Hotel at Brockenhurst benefits from three restaurants offering a choice of dining experiences all conforming to the hotel’s overall food policy of using free-range, organic and local produce wherever possible.
The Manor restaurant has been transformed into a new restaurant called Cambium created by designers Sue and Bonnie Stowell, who have taken inspiration from the New Forest with a nature theme leading the décor. It now offers a more intimate dining experience with bespoke oak leaf golden screens separating diners. Cream curved banquette seating and chairs upholstered in moss like fabric are set against dark wood tables and hand painted English trees adorn the walls.
Head Chef Alistair Craig offers an imaginative menu which makes excellent use of the local larder, showcasing traditional dishes with a modern twist. Open your account with scallops, char-grilled celeriac, pear, roasted hazelnuts and celery cress or asparagus, velouté, crispy hen's egg, asparagus and truffle. Main courses take in beef fillet and slow braised cheek, horseradish, Exbury greens and Jersey Royals, while from the sea there's cod, coconut, cauliflower, pickled golden raisin and spiced sauce. Close the show with lemon tart, wild strawberries, meringue, shortbread and basil or pistachio crème brule, black berries, candied pistachio and New Forest Yoghurt.
Located within the hotel grounds, Blaireaus French Bistro and Bar provides a warm and friendly atmosphere where the kitchen serves up a wide ranging choice of French classics to nouvelle cuisine. Light meals, lunch and dinner are available in this Parisian style brasserie.
The Zen Garden Restaurant is located at SenSpa, the £6 million Oriental spa within Carey’s Manor. Thai chefs create authentic Thai dishes designed to complement the spa experience and overall theme of the East meets West; extensive hydrotherapy facilities, indulgent beauty treatments performed by eastern and western therapist and using natural products.
All three restaurants are open to non-residents and in between lunch and dinner the famous Afternoon Tea at Carey’s Manor is not to be missed.
