Review on Drawing Room
Built as a Georgian country residence in 1725, the Drawing Room can be found alongside the A470, 'twixt Cwmbach and Newbridge-on-Wye'. Colin and Melanie Dawson have injected some new life into the place and it's now a very desirable, sumptuously attired restaurant-with-rooms.
The owners are also the chefs and they work to a short seasonal menu that blends Welsh ingredients with noticeable French influences. Fillet of locally reared beef comes with a panaché of baby vegetables, wild mushrooms, Madeira and chestnut purée, while roast breast and ballotine of 'woodland' chicken could be served with new season's peas, broad beans and wilted Baby Gem.
To start, there might be foie gras and spinach terrine or Parmesan custard with crispy Carmarthen ham, organic salad leaves and anchovy dressing, and you could finish with lemon sabayon tart with honeyed Mascarpone cream or a 'tasting' of Cawes Cenarth organic cheeses with homemade fruit cake.
