Review on Cotto at the Gonville Hotel
Cotto is a gem of a neighbourhood bistro that after 10 years on Cambridge's East Road moved to the family-owned boutique Gonville Hotel overlooking Parker’s Piece. The smart contemporary dining room is a fitting setting for Hans Schweitzer's carefully crafted dishes.
Hans Schweitzer, who after training at the prestigious Munich Hotel School in Germany, gained the title of Maitre de Cuisine at the age of 25. He has since travelled the world perfecting his culinary skills, including training as a Confiseur and Chocolatier in Switzerland and Paris, owning his own restaurant, Table in Germany where he was awarded a Michelin star at 29 and also working at the renowned Michelin starred Midsummer House.
Hans is dedicated to using locally sourced products, organic wherever possible, and the ingredients used in his dishes are unrivalled in quality and freshness. Open proceedings with a flavoursome game consommé with beef marrow dumplings or fresh river and applewood smoked salmon gallantine on a herb coulis. While main courses could take in dry aged, grass fed, sirloin steak with shallot and peppercorn sauce or Salt Marsh lamb shank on its own jus with shallots, all served with market vegetables of the day and potatoes. Beautifully presented desserts are tempting with a spice island roasted pineapple, paired with Mount Gay rum and raisin ice cream or a claret and cassis Williams pear served with honey and bee pollen ice parfait and for the chocoholics there is a mouth watering selection of hand made chocolates. There is a reasonably priced wine list to compliment the dishes and service is attentive and friendly.
A fabulous selection of cakes and patisserie products are prepared daily, including their very popular sourdough bread baked in a wood-oven.
