Review on Richmond House
'A wonderfully welcoming place that wraps itself round you with kindness, comfort and delicious food,' wrote one reviewer about this glorious country house. Built by the Earl or Cork in 1704 it is now one of the leading hotels and rural hideaways in the region, thanks to the dedication and personal hospitality of the Deevy family.
The elegant cove-ceilinged dining room is the jewel in the crown and its makes a suitably animated setting for Paul Deevy's inspired cooking. Carefully sourced local produce is at the heart of things, and the kitchen also makes use of pickings from the hotel garden (lovage for soup, sweet cicely for sorbet).
Country house classics rub shoulders with more innovative ideas drawn from the contemporary repertoire, thus duck rillette with Cumberland sauce and grilled fillet steak with champ and béarnaise sauce could line up alongside smoked duck and Asian vegetable spring rolls with harissa or roast fillet of Waterford lamb with tapenade, sun-dried tomatoes and rosemary jus. To conclude, try strawberry meringue roulade or orange pannacotta. The wine list has been assembled with care and acumen; around 20 are available by the glass and it's worth watching out for monthly promotions.
