Review on The White Pheasant
The White Pheasant, a whitewashed 18th century building is set in the rural Cambridgeshire village of Fordham, just four miles north of Newmarket. The interior is as warm and welcoming as can be with a log fire blazing in the hearth and although it still plays its part as a local watering hole serving the local community, it's the food that is proving to be the big draw.
This family run enterprise has talented chef/patron Calvin Holland at the helm, who has plied his trade at some of the UK's finest multi-rosette and Michelin star restaurants, and more recently was Head Chef at the well regarded Crown & Punchbowl in Horningsea. His food is based around keenly sourced local ingredients for a seasonal menu, together with a daily changing specials board and their popular Taster Menu evenings.
Expect the likes of ballotine of Gressingham duck served with spicy plum compote and toasted brioche or a classic smoke salmon with shaved fennel, orange salad and citrus mayo amongst the starters. Well presented main courses offer Woodview Farm Suffolk roasted cannon of lamb, braised shoulder, potato and goat’s cheese terrine, carrot purée and pine nut crumb or pan fried fillet of sea bass, pear purée, potato fondants, buttered leeks and brown shrimp butter. Desserts are picture pretty with a blackberry mousse, lemon jelly and sorbet or maybe dark chocolate brownie, cherry and hazelnut.
There's a well considered wine list to match the food with some nice choices available by the glass.
