Michelin starred Chef Mark Sargeant's Rocksalt Restaurant & Bar in Folkestone is a truly spectacular new building in a glorious waterside location with panoramic harbour views looking across the English Channel towards France, and Folkestone’s quaint harbourside houses and fish market as the backdrop. With his gilt-edged CV which includes Head Chef at Gordon Ramsay at Claridge's and National Chef of the Year, this is Sargeant’s first solo restaurant project and his ambition is to help turn Folkestone into the next Padstow. This multi million pound new restaurant designed by award winning architect Guy Hollaway, is already the talk of the town.
While Sargeant runs the business, Marcin Szelag has joined Rocksalt as executive chef leading a brigade of 15 chefs. Expect a menu that showcases the best of seasonal British produce from local suppliers that is divided into sections that include shell fish, smoked fish (from their own smokehouse), catch of the day, butcher, vegetables and puddings. Open your account with perhaps local rock oysters, smoked mackerel pate or Chalke Valley watercress soup before moving on to maybe grilled squid with lime and chilli, sardines from the Josper Grill or a 32 day aged steak with a selection of different sauces. Puddings might come in the shape of gooseberry and honeycombe cheesecake, rhubarb fool or a opt for a plate of Kent and Sussex cheeses with Spelmonden Farm pickles and oatcakes.
A short globetrotting wine list contains some well-chosen and moderately priced quaffable stuff with a handful of top end bottles for that special occasion.
