Review on The Cobo Bay Hotel
The views out to sea are magnificent, and so is the location: this family-run seaside hotel overlooks the golden sands of Cobo Bay on Guernsey’s west coast, and diners can watch spectacular sunsets from the panoramic windows of the romantic restaurant.
Given the setting, it’s no surprise that fresh seafood finds its way onto the daily changing dinner menu: for example, a trio of monkfish, scallops and king prawns steamed on a bed of aromatic root vegetables with lime and coriander beurre blanc could be followed by grilled fillet of brill with wilted spinach and hollandaise sauce.
Elsewhere, you can expect a broad range of alternatives, taking in warm vol-au-vents of wild venison and woodland mushrooms, chicken Wellington with white wine and tarragon jus, and roasted Mediterranean vegetable risotto, followed by Bramley apple tart with iced prune and Armagnac parfait or bitter chocolate ganache with strawberry compote and vanilla Mascarpone.
