Review on The Dolphin Hotel & Restaurant
A real gem on the unspoilt island of Inishbofin, the Dolphin started life as a modest restaurant before expanding into a fully-fledged hotel during 2006. Pat and Catherine Coyne run the show as a double act: he oversees proceedings out front, while she holds sway in the kitchen.
Lunch is a leisurely affair that runs right through the afternoon, and the menu is a simple run through pizzas, salads, pasta and the like. Things get more serious in the evening, when Catherine shows off her prowess with more contemporary dishes along the lines of smoked chicken wuntuns with Waldorf salad and parsley oil, wild salmon with julienne of leeks and Dutch butter sauce or roast rack of lamb on boulangère potatoes with rosemary jus. Meals end on a high note with desserts such as mango and Malibu cheesecake or sticky toffee pudding.
