Rightly dubbed ‘the hotel on the shore’, Bunchrew House is a carefully restored seventeenth-century mansion standing in 20 acres of grounds only yards from the waters of Beauly Firth. Sometimes the waves even lap against the garden wall, and the views out towards Ben Wyvris and the Black Isle can be take your breath away.

Fabulous vistas and great sunsets are a bonus if you happen to have a window seat in the wood-panelled restaurant. The food here has a modern European edge, although the kitchen takes care to garner fine Scottish produce for its inventory of dishes.

If you are in the mood for fish, you might be taken by the prospect of grilled fillet of cod topped with a pesto crust, served with smoked mussel and saffron sauce or Thai-dusted Bunchrew salmon with a medley of baby leeks and fennel with lemongrass sauce. Fans of meat and game might set their sights on breast of wood pigeon with spiced couscous and Madeira sauce or char-grilled fillet of beef on a sweet potato rösti, garnished with fried celeriac and finished with a piquant shallot sauce. For afters, try caramelised lemon tart with Armagnac sauce or blueberry, raspberry and guava crème brûlée.
