The Marquess Tavern Islington is emphatically ‘a public house â€" the classic institution and the way it should be’. Inside, there’s no nonsense or frippery, just high ceilings, polished woodwork, old sofas, elegant mirrors and assorted bric-a-brac.
Head chef in Gethin Jones who previously worked at the well regarded Graze restaurant in Brighton. Each month, the kitchen highlights recipes from the nation's gastronomic past and conjures up the retro pleasures of pig's head terrine with red cabbage, roast pork belly with black pudding, Charter pie and braised shoulder of Herdwick lamb (enough for 4 to share) infused with lavender - not to mention treacle tart and rhubarb burnt cream.
Flavours of the wild also come through in â€" say â€" potato and wild garlic soup or pan-fried scallops with buttered samphire, while English cheeses are served with interesting accompaniments such as apple and date chutney. Each dish is flagged with an appropriate tipple, and the entire drinks list is exemplary â€" an indulgent labour of love that tempts the palate with some 40 bottled beers, draught ales from Young’s and Meantime, plus perry and even English sparkling wines.
