Review on Seiont Manor Hotel
On a clear day, the peaks of Snowdonia loom large beyond this delightful country hotel set in 150 acres of parkland, with the River Seiont running through it. Comprising a collection of re-developed eighteenth-century farm buildings plus a Georgian grey-stone manor house, it is now a romantic destination with all manner of facilities including an indoor swimming pool and sauna.
Formal meals are served in the elegant, beamed Llwyn y Brain Restaurant, a classic dining hall where guests can look forward to modern food based on Welsh produce. Pink-roasted rack of Snowdonia lamb with a rosemary and mustard crust, braised red cabbage, sweet potato purée and redcurrant reduction is a signature dish, but the repertoire could also take in pressed terrine of confit rabbit wrapped in Parma ham and pan-seared duck on garlic rösti with vegetable 'spaghetti' and wild mushrooms.
Seiont Manor's wine list is well worth exploring, with its hand-picked selection of serious drinking from around the globe. If you fancy something more casual, try the new Conservatory Brasserie; food is available all day (12.00 - 9.30pm).
