Las Cuevas de Luis Candelas is located in the Arco de Cuchilleros, next to the Plaza Mayor in Madrid. Founded in 1949, it is one of Madrid's most historic restaurants. Today, Las Cuevas de Luis Candelas retains its original features. Its name comes from the famous caves that sheltered the infamous 19th century bandit, Luis Candelas, who robbed from the rich to give to the poor. Las Cuevas de Luis Candelas offers traditional Madrid cuisine, including roasted suckling pig and suckling lamb slow cooked in a wood-fired oven, 'cocido madrileño' - Madrid's traditional three course stew, oven-roasted hake 'a la cazuela', tripe, or typical Madrid desserts, all accompanied by an extensive wine list.
