Built in 1724 and set in 1,000 acres of rolling parkland at the foot of the glorious Pentland Hills, this re-modelled baronial Georgian mansion now does duty as a high-class hotel and country club complete with two golf courses.
Formal meals are served in the Pentland Restaurant, where the kitchen makes good use of native Scottish ingredients for a menu that might feature goats' cheese tart with red onion marmalade, herb-crusted rack of lamb and mignons of Angus beef with goose liver raviolo, followed by desserts such as cinnamon pannacotta with apple compote.
