SAMPLE DISHES

STARTERS

Today's soup - our soups are usually vegetarian and made from the finest ingredients.

Trio of pates on a balsamic glaze. Choose all or make your selection from red Lentil and sun dried tomato pate [vegetarian]; cheese, walnut and caraway seed [vegetarian]; or chicken liver with Cointreau.

Melon with air dried Carmarthen ham.

Smoked salmon, prawns and New Zealand green lipped mussels with lemon, and blade pepper.

Thai king prawns with kaffir lime leaves, chilli and ginger in coconut milk.

Wild boar terrine with peach and apricot chutney.

Black pudding, made by our butcher, served with roasted apple slices, drizzled with a creamy black peppercorn sauce, and set on tossed salad leaves.

MAIN COURSES

RED MEAT CHOICES

Calves liver with pancetta in Marsala sauce.

Lamb Henrietta with minted mash and a honeyed glaze.

Rack of Lamb rubbed with garden rosemary and served with a rich Lamb jus stirred through with red currants.

Sirloin steak [7oz] traditional style, with fried onions, mushrooms and griddled tomatoes.

Fillet of beef set on a horseradish and thyme potato cake with mushroom ragout and Madeira sauce.

WHITE MEAT AND POULTRY CHOICES

Breast of chicken poached in white wine flavoured with lemon and tarragon.

Breast of Gressingham duckling with a honey and clove sauce.

Wild boar in a sage and onion sauce with Calvados and roasted apples.

Cassoulet - a southern Mediterranean slow-cooked dish containing black eyed beans in a rich tomato sauce, garlic sausage, duck leg and Welsh Dragon sausages with chilli.

FISH CHOICES

Grilled Lobster with garlic butter or Thermidor or cold with salad [must be pre ordered].

Mussels in white wine.

Thai king prawn with kaffir lime leaves, chilli and ginger in coconut milk served with fragrant Thai rice and spinach.

Fillet of sea bass with asparagus and a red onion braise drizzled with fresh tomato and red pepper coulis.

Seared tuna steak nicoise.

Grilled rainbow trout with almonds.

Salmon fillet set on a bed of puy lentils and topped with pesto and parmesan with white wine and watercress sauce.

GAME CHOICES

Pan fried venison served pink with a rosemary, red currant and blueberry sauce.

Rabbit and pheasant pie with cider.

Grouse is available in season but must be ordered ahead.

VEGETARIAN CHOICES

Vegetarian cassoulet with griddled courgettes and garlic mushrooms finished with crispy bread crumbs and cheese.

Cider, Lentil and hazelnut Loaf with broccoli and almond sauce.

Red pepper filled with puy lentils braised in red wine flavoured with rosemary and set on a fresh tomato coulis.

Wild mushroom risotto in filo with roasted vegetables.

Thai vegetable curry with fragrant rice.

Vegetarian crepe filled with spinach and pine nuts flavoured with nutmeg and dressed with a red pepper coulis.

Cashew and Brazil nut roast stuffed with parsnips and chestnuts served with a rich red wine sauce.
