Review on Castletroy Park Hotel, McLaughlin's
Situated in the heart of Limerick, close to the University, Concert Hall and National Technology Park, this purpose-built redbrick hotel is equally suited to the needs of tourists and business travellers.
McLaughlin's restaurant is apparently named in honour of Thomas McLaughlin, the engineer who developed hydroelectric power in Ireland. But there's nothing stuffily academic about the spacious dining room or the innovative modern food on offer.
The complex carte might open with veal sweetbreads in crispy pastry with prawns and cep emulsion or glazed belly pork with pan-fried scallop and caramelised apple. Main courses could feature marinated fillet of monkfish with smoked duck orzo and bouillabaisse sauce or grilled fillet of beef with a 'shepherd's pie' of ox cheek, baby spinach and Roquefort butter, while desserts have included warm pear and almond tart with maple and walnut ice cream. Light meals and lunches are available in the Merry Pedlar and the Conservatory Bar.
