Review on Trivet
Trivet was launched in November 2019, taking over the former site of the Portuguese restaurant Londrino, it's tucked away opposite the Guinness Trust Buildings in the Snowfields Yard development, steps from Guys Hospital and a five minute walk from London Bridge station. The team behind this new venture certainly have 'A' list credentials, having both worked at esteemed chef Heston Blumenthal's Fat Duck restaurant in Bray for 12 years. Jonny Lake was Executive Chef of the Fat Duck where he held three prestigious Michelin stars, also overseeing the Hind's Head pub and The Crown at Bray, and Isa Bal was the Head Sommelier.
It's a floor to ceiling glass walled space, flooded with natural light it can be opened fully in the summer months, so guests can enjoy dining al fresco. The interiors have been designed by DerinYesil Architects, featuring a relaxed wine bar and restaurant with a large open kitchen taking centre stage. It's attractively fitted out in an Scandinavian style with natural wood furnishings and fittings, contemporary lighting and arty prints on the walls.
The menu is concise and to the point offering just five starters and mains, with the emphasis on core ingredients, showcasing precise and innovative cooking techniques. Starters herald dishes in the shape of scallop, barbucine and sesame or maybe veal sweetbreads, raw mushroom and cumin. After that, consider roast pigeon, persimmon and chervil root or from the sea salt-steamed turbot, cocos beans and tarragon oil. To close the show there's desserts like Hokkaido potato, baked potato Mille feuille, sake and white chocolate mousse, butter and sake gelato, taking inspiration from a meal Jonny and Isa had at an izakaya in northern Japan.
The wine list curated by Isa is a cracker, running to over 350 selections including wine made with both natural and conventional methods, and there's also a bespoke list of sakes, whiskies and spirits.
