Review on Auguste
The Auguste is a Michelin starred restaurant situated on a quiet street near the Rodin Museum in the 7th arrondissement of Paris. This modern restaurant is colourful with its red padded banquettes and blue upholstered chairs and walls featuring large contemporary artwork. Chef and proprietor is Gaël Orieux who has an impeccable pedigree having worked at some of Paris' top restaurants such as Senderens, The Crillon, Taillevent and with Yannick Alléno at Le Meurice. He is keen to promote eco responsible eating and everything on his menu will have been sourced with great care.
The cuisine is classical in style and he will use little known or neglected ingredients in his dishes, such as pout or horse mackerel, although fish such as sea bass and plaice appear from time to time. Although the carte favours fish, carnivores are not forgotten either and one might find breast of Scottish grouse or a layered foie gras with pork, steamed and deglazed with whisky on the menu. There is a short well chosen wine list and the service is professional without being too formal.
