Follow the signs to West Malling from J4 of the M20 to find The Swan, a radical conversion of a fifteenth-century coaching inn. Once a local watering hole, the Swan now wears a thoroughly contemporary suit of clothes, complete with two sleek bars and three dining rooms. Original restored beams now blend with granite and stainless steel, and the place plies its trade as a brasserie in all but name.
Menus follow the seasons and the kitchen makes plentiful use of locally grown and organically reared produce. As a curtain-raiser, try apple wood smoked ham hock terrine, celeriac remoulade or Cornish mackerel, beetroot, parsley & shallot salad, before Hereford beef peppered steak, creamed mushrooms or Longford Estate Sea trout, spinach, brown shrimp and shellfish sauce. Desserts range from Valhrona Chocolate Mousse, Caramel Bonbon to Swan Strawberry Eton Mess, then – as a finale- enjoy coffee and cognac in the comfort of the first-floor library.
Outside is a paved and shaded terrace, which comes into its own when the weather is kind. It's a delightful spot with robust oak and zinc tables, Phillipe Starke chairs and mature olive trees all around. The same team also runs the Swan at Shakespeare's Globe on London's South Bank.
