Review on The Wild Geese
From the outside, this ever-so-pretty little cottage restaurant looks for all the world like an oversized doll's house behind a charming walled garden. Inside, it comprises a series of cosy rooms stuffed with Victorian bric-a-brac - yet it's the setting for one of the most exciting modern restaurants in the region.
Chef David Foley learned his craft with some big names including Michel Roux and Stephen Bull before honing his skills in several top Irish kitchens. Since striking out on his own he has developed a distinctive personal style inspired by the trends of the times.
Native Irish produce is the starting point for dishes such as warm tartlet of Kenmare mussels topped with a Parmesan crust with ginger cream sauce or pan-fried Castletownbere scallops served on potato and chive pancakes with Champagne sauce. Rack of Adare lamb and fillet of beef are given classic treatment, while desserts might range from lemon tart with an Italian meringue topping to a trio of flavoured crθme brϋlιes. The well-spread wine list provides sound drinking across the range.
