The Calders Bistro is one of its great assets and the kitchen specialises in modern Scottish cuisine with strong Mediterranean influences. A typical menu might open with lasagne of smoked haddock and spinach with Arran mustard velouté before best end of Perthshire lamb with plum tomato and aubergine galette, roasted garlic and thyme sauce or escalope of salmon with orange and star anise powder, crayfish risotto and ginger butter sauce. To round things off, there might be pistachio macaroon with Kirsch parfait and cherry compote.
