In an area of outstanding beauty on the edge of Cashel Bay, this imposing country hotel was built as a shooting lodge in early Victorian times. It derives its name from the Earl of Zetland (Shetland) who was a frequent visitor in times past.
Panoramic views are a feature of the airy restaurant, where light streams in through the huge bay windows. Fixed-price dinner menus change each month to take account of seasonal supplies and the pickings from the hotel’s garden. The result is a fixed-price repertoire that might open with smoked chicken risotto before steamed fillet of cod with saffron and mussel cream, fresh lobster (from the seawater tank) or char-grilled rump of local lamb with goats’ cheese and potato mousse. Desserts have featured dark chocolate fondant, and the comprehensive wine list offers an enticing spread of good drinking from around the globe.
