Review on Luke's Dining Room, Sanctum On The Green
Following a serious makeover, Sanctum On The Green, a genteel country inn re-opened as a stylish boutique hotel and restaurant set in manicured lawns overlooking Cookham village green. Owners Gary Hollihead and Mark Fuller (who also run the Embassy and Geales fish restaurant in London) have given the place a mainline injection of metropolitan fizz tinged with rustic gentility.
Sanctum On The Green is now home to a new restaurant called Luke's Dining Room headed by young chef Luke Thomas, a former Springboard FutureChef 2009 Award winner. Thomas has learnt his craft at such renowned establishments as Chester Grosvenor Hotel, Soughton Hall Stables Bar Restaurant, as well as work placements at Michelin-starred restaurants The Fat Duck in Bray and Rhodes W1. Overseas experience includes working at the three-Michelin-starred Alinea in Chicago and La Pergola in Rome as well as the French Laundry pop-up at Harrods.
On the food front the menu works its way through some inviting modern dishes along the lines of chicken liver parfait, Yorkshire rhubarb served with Melba toast or mussel curry, fritters, apple and almond. Main courses take in pork chop, bonbons, creamed Savoy cabbage and cracked mustard or Brixham caught fish of the day, tarter sauce and ratte potatoes. Desserts offer satisfaction with a rice pudding, coconut and caramelised banana or rhubarb and custard, frangipane tart, blood orange and ginger.
