The Ebb and Flow Restaurant, the hotel's elegant first-floor restaurant - boasts spectacular views and makes a suitably swish setting for exciting contemporary food. This is the world of roast scallops with curried cauliflower and pancetta crisps, tournedos of tuna Rossini, and local sea bass with coconut risotto, fennel fritter and lemongrass cream.
Away from fish, visitors can look forward to ravioli of oxtail with braised little gem and wild mushroom ragoût, a trio of Welsh lamb, and fillet of pork with crispy belly, red cabbage confit and root vegetable dauphinoise. Desserts set out to impress with - say - a three-part 'tasting of chocolate' or tonka bean crème brûlée with lychee sorbet and almond palmier. The 70-bin wine list makes entertaining reading and is packed with well-chosen bottles from global sources.
