Liberty Bistro is located in the historic 'Old City Hall' in downtown New Braunfels. We celebrate the foundation and idealism of this Great Nation and the food that has been brought from all parts of the world with Immigration and naturalization.
Our cuisine is 'Contemporary American' and we focus on traditional French technique. We locally source much of our product from small family owned local farms.
We are a fine casual dining restaurant you can dine in with jeans on or dressed to impress.
We offer fresh, wild seafood, organic Lamb from New Zealand, Angus Filet and and Ribeye, Chicken, Crab Cakes, Homemade Gnocchi, Sushi grade Tuna and Pork Tenderloin. All our dressings are house-made. We make all our own stocks and Demi-glaze from scratch. We offer 'New York Style' thin crust Pizzas and Flat-breads out of our wood fired pizza oven.


We have semi-private and private dinning rooms available for parties from 6 to 36. We cater off site and regularly offer wine-dinners.
