Review on Sandbank
Chef/proprietor Matthew Locker works hard to make an impact in the rather conservative environs of Leigh-on-Sea in his Sandbank Restaurant. He has set up his own on-line recipe book, offers special discounts on selected nights, runs a newsletter and stages special themed evenings – in addition to feeding the punters day after day.
His menus offer something for everyone, offering plenty for those with traditional and adventurous palates. You could start off with something as simple as a tomato and Mozzarella salad with basil vinaigrette or try king scallops with lime and coriander salsa garnished with crispy Parma ham.
Main courses are equally varied: if meat is your thing, best end of lamb in raspberry and rosemary jus with garlic roast potatoes might do the trick; alternatively go for fish – fillet of sea bass with tomato and chive hollandaise, for example. For dessert, there are usually things like Baileys crème brûlée 'under a caramel sugar nest'.
