Review on Pinion
September 2018 saw Gary Usher, chef and restaurateur recently named by The Caterer as one of the most influential people in the industry, open his fifth bistro named Pinion in the heart of historic Prescot, just eight miles from Liverpool. It joins an award winning group of bistros that began in January 2011 with Sticky Walnut in Hoole followed by Burnt Truffle in 2015, Hispi in Didsbury in September 2017 and Wreckfish in Liverpool in October 2017.
Named after a watch mechanism, a nod to Prescot's big watch-making history, it was launched following a kickstarter campaign that successfully raised £50,000 in less than 24 hours. Located in a former Betfred premises, it has undergone a stylish refurbishment, smart deep studded purple banquettes run down one side of the restaurant with polished dark wood tables and bentwood chairs. It looks eminently chic with exposed brick walls and a sparkling chandelier.
The kitchen sends out an array of tempting dishes along the lines of chicken liver pate, toasted milk loaf and damson chutney or torched mackerel, watermelon, radish and pickled shallot. Main courses pick up on braised featherblade of beef, celeriac puree, broccoli, truffle and parmesan chips or from the sea there's pan fried sea bream, pumpkin fregola, sweet pickled fennel, roasted spring onion dressing. Racking up the comfort factor, desserts conjure up a steamed lemon suet sponge, caramelised plums and mascarpone or profiteroles with salted caramel sauce.
There's a carefully compiled wine list that travels the globe, together with a nice selection of beers including Elite Beerstro's brewed in Manchester by Blackjack.
