Review on White Swan at Fence
Lancashire pub the White Swan at Fence has rapidly become a crowd-puller thanks to its ambitious modern food, resulting in a galaxy of awards including two AA Rosettes and a prestigious Michelin star. Owners Laura and Gareth Ostick have done a wonderful job creating a welcoming atmosphere in the traditional pub, with its roaring fires that hiss and crackle, while drinkers congregate at the polished curved wood bar, sipping Timothy Taylors award winning real ales.
Just one of three Michelin starred venues in Lancashire, manning the stoves is gifted chef Tom Parker, who was the youngest sous chef to grace the kitchens of the critically acclaimed Northcote in Langho. He is pulling out all the stops for an inventive menu that changes regularly, reflecting the finest seasonal locally sourced produce. Offering an a la carte and tasting menu, guests might see dishes along the lines of ox-tail cottage pie, bone marrow, potato cracking and thyme or roast Orkney scallop, smoked eel, celeriac and apple. Main courses usher in partridge wellington, black truffle, trompettes and madeira, while those who prefer fish will enjoy wild turbot, smoked haddock, curry and coriander. Brining down the curtain are desserts like tiramisu, banana ice cream, coffee caramel and Michel Cluizel chocolate, or there's plenty of tempting stuff among the cheeses.
To accompany the food there's a comprehensive wine list from all the major wine-growing regions, as well as their own very popular fruit infused spirits.
