Review on Aimsir at Cliff at Lyons

Once owned by the co-founder of Ryanair, the late Dr Tony Ryan, Cliff at Lyons is a luxurious privately owned hotel occupying an unusual collection of historic rose-clad buildings on the banks of the Grand Canal. Surrounded by the beautiful verdant countryside of County Kildare it's located just a 30-minute drive from Dublin.

The showpiece restaurant Aimsir, which means weather in Irish was launched in May 2019, set within an original cut-stone cottage on the grounds of Cliff at Lyons, part of which used to be a cookery school. Run by Chef Jordan Biley the former Head Chef of the three-Michelin-starred Maaemo in Oslo Norway together with his wife Majken, whose CV includes Paul Cunningham's two-Michelin-starred Henne Kirkeby Kro and she leads front of house with great charm and professionalism.

Amsir has an elegant and contemporary 24-seat dining room and bar area, designed in partnership with London based consultancy BusbyWebb. Overlooking the garden it's bathed in lots of natural light in a colour palette of blues. Well-laid tables are set on chevron wood flooring with table settings made by local artisan potters, wood-turners and knife-makers. At the hub of the restaurant is a central island pass where the chefs add the finishing touches to the dishes.

The kitchen celebrates the finest organic and foraged ingredients available in Ireland, driven by the seasons it offers diners a single tasting menu of around 15 to 18 dishes. Starting with a series of snacks it moves on to savoury dishes from both land and sea, finishing with a sweet section of desserts and petits fours. Jordan's precise cooking is inventive and full of exciting flavours shot through with intriguing ideas and presented with artistic flair.

The restaurant has certainly hit the ground running having picked up awards at the 2019 Food and Wine Awards. Sommelier Cathryn Steunenberg won the Sommelier of the Year, Jordan Bailey won Best Chef in Leinster and also was Highly Commended as Rising Star of the Year and Majken Bech-Bailey was Highly Commended as Host of the Year. Aimsir was also delighted to pick up two prestigious Michelin stars in the 2020 edition of the Guide.
