Review on Restaurant Hjem at The Hadrian Hotel
Swedish chef Alex Nietosvuori and his partner, Northumberland-born Ally Thompson are the duo behind Restaurant Hjem in the tranquil village of Wall, just north of Hexham. The word Hjem pronounced 'yem' means home in both Scandinavian and the local Northumbrian dialect.
Alex has an excellent pedigree having trained in two-starred Michelin Daniel Berlin Krog, as well as three-starred Michelin Maaemo in Oslo and also held the post of Head Chef at Bror in Copenhagen. Ally has managed restaurants throughout the globe and she is in charge of the attentive and effortlessly professional service, that diners experience from the moment they enter the restaurant.
The 24-seat destination restaurant is attached to the The Hadrian Hotel and the couple also manage the all day menu in the pub. The restaurant has a Scandinavian vibe, decorated in neutral colours with light wood furnishings and stunning views of the rolling hills of the Northumberland countryside.
In the open kitchen Alex presents guests with a choice of two tasting menus of either six or twelve courses, drawing on seasonal ingredients from local producers. Cooked with Scandinavian technique and precision there's much to enjoy on the menu with dishes like chicken liver, pine and preserved pine cones or quail egg and pickled pork. From the sea you might see offerings like smoked mackerel, raw cream and roe or lightly baked cod, bacon and broad bean shoots, finishing with a delicious singing hinny.
Sommelier Anna Frost, formerly of L'Enclume and Braun in East London has curated a first-class wine list, that can also be paired with Alex's dishes.
